Frisée is finely cut curly endive with lacy, pale inner leaves that look like green-gold filigree—the star of salade lyonnaise. Bitterness is refined rather than cabbage-heavy when hearts are well blanched. Premium heads are airy and crisp, not limp or yellowed. Build classic bacon-egg frisée salads, or use as a bitter loft in composed plates. Prefer frisée when the plate needs height and elegance. Dress assertively; mild vinaigrettes disappear.
