Tule elk (Cervus canadensis nannodes) are the smallest elk subspecies, endemic to California and recovered from near extinction to managed herds in the Central Valley and coastal ranges. Meat is occasional hunter harvest under tightly controlled tags. When available, expect mild, fine venison from smaller carcasses—excellent for intimate roasts. Conservation success story first; culinary supply is incidental to population management.
