Rocky Mountain Elk

Rocky Mountain elk are the most numerous and familiar North American elk subspecies, ranging the Rockies and reintroduced Midwest herds. They supply the bulk of hunter venison and much ranch breeding stock. Meat is deep red, lean, and mildly sweet-game—superb as backstrap medallions, roasts, and burger. Bulls taken after the rut can be stronger; cows and young bulls are table favourites. Field care in mountain camps preserves quality.
