Sambucus nigra is European black elder—flat umbels of creamy flowers and hanging clusters of near-black berries used for cordial, wine, immune-market syrups, and cooked sauces. Raw berries and other plant parts can be unpleasant or harsh; cooking is traditional. Flavour is musky-grape-earth with deep purple pigment. Cook berries into syrup, jam, and wine; flowers make fritters and cordial separately. Strip berries from stems (stems are not wanted in food). Freeze clusters for later processing. Confirm species ID—red elder and other Sambucus differ. Never market raw juice as casual beverage without proper processing knowledge.
