Welsummer eggs are large and famously dark terracotta to speckled reddish-brown, from the Dutch breed named for Welsum. Flavour is full and farmstead; the dramatic shell makes them a favourite in mixed heritage cartons beside blues and creams. Yolks respond beautifully to maize and forage for deep orange colour. A showy breakfast egg that still performs in sponge cakes when weighed.
