Pheasant eggs are olive to brown, smaller than chicken eggs, with a delicate game-tinged flavour and a yolk that is rich relative to the white. They are a by-product of game farms more than a retail staple, excellent soft-boiled or fried for two-bite luxury breakfasts. Collect only from clean farm systems; wild nests should be left alone. Baking works if you scale by weight and embrace a slightly wilder aroma.
