Muscovy Duck

Muscovy duck eggs are large, thick-shelled, and rich, with a high yolk ratio and a clean, less “pondy” flavour than some mallard-type duck eggs when birds are well managed. Excellent for custards, brioche, and luxurious fried eggs. Whites set firmly; baking gains tenderness and colour. Laying rate is lower than Khaki Campbells—treat as a premium duck egg.
