Leghorn eggs are the archetypal white commercial and farm egg—prolific layers produce medium to large white-shelled eggs with clean, mild flavour and excellent all-purpose cooking performance. Italian origin genetics underpin much of the world’s white egg supply. Ideal for meringues and recipes where shell colour preference is white. Flavour is lighter than some heavy dual-purpose breeds unless birds are pasture-raised with diverse diets.
