Size is smaller; price is higher. Flavour justifies the specialty tag when fully ripe. Handle spines carefully if not fully cleaned. Chill and scoop; brix can surprise fans of bland pink types. Shorter shelf life and lower yields keep it premium. Serve alone so sweetness is noticed.
