Squalus acanthias is the spiny dogfish—small shark with sweet, firm flesh that fries brilliantly in batter and smokes well. Dorsal spines require care when dressing. Properly bled meat is mild and cohesive, a classic of British rock salmon and European markets. Use for fish and chips, stews, or hot-smoked slices. Stocks have been overfished and later rebuilt in some Atlantic areas—check current MSC or national advice. One of the more reasonable small-shark food species when managed.
