Dukat is a leaf-focused dill with dark green, highly aromatic fronds and slower bolting than old landraces—bred for dill weed more than heavy seed. Flavour is sweet-anise with less harshness when young. Scandinavian and eastern European cooks prize it for new potatoes, fish, and cold soups. Keep cutting to delay flowers. Excellent frozen as chopped weed in oil.
