Zahidi is a medium-to-large Iraqi semi-dry date with golden-amber skin, a fibrous-chewy bite, and a mild honey flavour that never tips into Medjool’s sticky toffee. Flesh is drier and less translucent than Deglet Noor, so pieces separate cleanly on a board and hold shape in cereal, trail mix, and stuffed-date platters without weeping sugar syrup onto neighbouring food. Growers value the cultivar’s heavy crops and tolerance of varied oasis soils; packers value how well it ships at lower moisture than soft dessert dates. In the kitchen Zahidi is the practical everyday date—chop for cookies and granola, simmer into stews, or serve as a less cloying snack than premium soft types. It needs less refrigeration than Medjool yet still benefits from cool, dry storage to keep texture from hardening into leather. When a recipe calls for “dates” without specifying a luxury soft cultivar, Zahidi is what many bulk bins actually contain.
