Thoory (often sold as “Bread Date”) is a dry Algerian-type date with tan-to-brown skin, low moisture, and a firm, almost bread-like chew that scrapes cleanly when sliced. Sugar is concentrated but not syrupy; flavour reads toasted caramel and mild nut rather than soft toffee. Because water activity is low, Thoory resists mould and sticks far less in bulk bins than soft cultivars, which made it a historic traveller’s and soldier’s ration fruit. Use Thoory wherever a recipe needs dry, choppable date pieces—granola clusters, date-nut bread, energy bars that must not weep, or long-keeping pantry snacks. It is a poor substitute if you want Medjool’s creamy mouthfeel; rehydrate briefly in warm tea or stock if you need softness for purees. Store at room temperature in a sealed tin for months without the refrigeration soft dates demand.
