Deglet Noor (“date of the light”) is a semi-dry Algerian/Tunisian workhorse—amber, translucent when held to light, firmer and less sticky than Medjool, excellent for chopping into baking and cereal. Flavour is delicate honey rather than heavy toffee. The industrial and baking default date. Stores and ships more easily than soft Medjools. Pit and dice for cookies, granola, and stews.
