Upland Cress

Upland cress (often Barbarea verna, sold beside true garden cress) offers peppery dark leaves that grow in soil without the aquatic habit of watercress—hardier in cold and easier in dry gardens. Bite is bold; leaves are larger than Lepidium microgreens. Sometimes called winter cress. Use in salads, wilt lightly, or as a robust garnish. Markets may blur names; expect a stronger, leafier green than delicate garden cress mats. Excellent cold-season pepper without a stream.
