Whipping cream is standardised for aeration—fat high enough (often ~30–35% depending on country) to trap air into soft or firm peaks when cold. Flavour is sweet-cream mild; sugar and vanilla are added after soft peaks for Chantilly. Chill bowl, beaters, and cream. Stop at soft peaks for folding, firm for piping. Overwhip becomes grainy butter. Stabilisers in some cartons help peaks last on cakes.
