Sterilised

Sterilised cream is heat-treated for long ambient or extended shelf life—flavour often more cooked-caramel than fresh pasteurised cream. Texture can be slightly grainy or very stable depending on process. Pantry backup for camping and emergency cooking; fine in cooked dishes where fresh top-note is less critical. Opened, refrigerate and use promptly. Not the first choice for delicate Chantilly.
