Half-and-Half
Half-and-half is a blend of milk and cream (or standardised low-fat cream), classic in North American coffee service. Fat usually sits near 10–12%—enough for body in a cup, not enough for stable whipped cream. Splash into coffee and tea, or thin sauces slightly. Do not whip for dessert peaks. Ultra-pasteurised versions keep longer but can taste cooked.
