Extra-thick cream is double or high-fat cream processed or formulated to hold a stand-up dollop on desserts—denser than pouring double, marketed for puddings and fruit where a soft peak of cream is wanted without whipping. Spoon from the tub; chill well. Some brands use process thickening rather than fat alone—read labels if you need pure cream. Not for coffee thinning; too heavy.
