Yellow Corn

Yellow corn is the default visual of global maize—carotenoid pigments tint kernels and meal gold. Commodity dents, many sweetcorn hybrids, and classic cornmeal all wear yellow. Flavour reads as standard “corny” sweetness in fresh ears and toasty depth in dried meal and polenta. Use dried yellow for polenta, cornbread, and industrial starch streams; eat yellow sweetcorn in season from local growers. Nothing exotic—just the colour class most recipes assume without saying so. Beta-carotene content is a nutritional footnote versus white types for some diet planners.
