White corn kernels lack yellow carotenoids—preferred for many tortillas, masa applications, and Southern US hominy and cornmeal traditions that prize clean colour on the plate. Field white dents and food-grade whites are selected for nixtamal performance and mild flavour. Sweet white hybrids exist separately for fresh eating on the cob. Nixtamalise food-grade white for masa; mill for white cornmeal and grits. Chefs often choose white for refined-looking tortillas at restaurants. Flavour is slightly milder than deep yellow meal to many palates comparing side by side.
