The green hue is unique among common food corns and yields distinctive masa colour on the comal. Hard kernels need proper alkaline cooking to soften without chalky centres remaining. Nixtamalise carefully; grind for green-tinted tortillas that signal Oaxacan heritage cooking on the plate. Also milled for specialty meal in small batches. Source true food corn, not purely ornamental lookalikes sold only for autumn décor displays without eating quality.
