Culinary behaviour mirrors European conger: dense muscle, mild flavour, tough skin. Fillet or steak large fish, discard the heavy skin, and cook thoroughly in moist heat or high-heat grill. Less famous than American eel (Anguilla), it is a different animal—marine, larger-boned, and stew-oriented rather than smoke-shop classic.
