Saithe is the Scandinavian and northern European name for Pollachius virens—firm-enough white flakes with a clean, lightly savoury taste used fresh, frozen, and in smoked products. Norwegian and Icelandic supply is especially associated with the saithe label. Texture sits between soft pollock and denser cod loins. Roast loins, make fish burgers, smoke cold or hot, or stew in tomato. Saithe takes dill, mustard, and rye-bread culture beautifully. Prefer thick centre cuts for roasting; use thinner pieces for mince and cakes.
