Macapuno is a Philippine coconut type whose endosperm stays soft, sticky, and almost jelly- like instead of forming ordinary firm white meat. Cooks prize it for sweets, ice cream, and specialty desserts rather than for copra oil yield. The unusual flesh is dense and mildly sweet, spoonable or cut into soft pieces. True macapuno is limited genetically and often more expensive than ordinary mature coconuts. Good jars or fresh lots smell clean and coconut-sweet; fermented off notes fail. Do not expect it to grate like standard mature flesh for everyday milk pressing. It is a dessert coconut identity, not a drinking- water specialty like king coconut.
