Syzygium aromaticum
S tier
Syzygium aromaticum is the evergreen myrtle that produces cloves—unopened flower buds dried into nail-shaped spikes of eugenol-rich spice. True cloves come only from this species; quality shows in oily, plump buds that snap and stain with brown oil. Use whole in braises, hams, and mulled liquids; grind fresh for baking and masalas. Species-level certainty matters where cheap exhausted buds circulate. Store whole, never pre-ground for long.
