Citrus medica is the citron—one of the ancestral citrus species—with huge, often thick albedo (pith), relatively dry flesh, and peel grown for candying, religious ritual, and fragrance more than juicing. Fruit shape varies from oblong to fingered. Perfume of the rind is ethereal and distinct from lemon. Candy peel (cedro), use zest sparingly, and seek etrog-quality fruit for ritual. Juice is scant and acidic. A specialty ancestral citrus, not a lemonade substitute.
