Saigon cinnamon is the market name for premium Vietnamese cassia (C. loureiroi)—loud, sweet, almost candy-spicy bark that makes American “cinnamon” taste shy. Oil content is famously high; aroma fills a kitchen when sticks hit a hot pan. Colour is rich reddish brown. Perfect for yâhn-forward baking, coffee syrups, and pho-style aromatics. Use less than Korintje by volume. Not interchangeable with Ceylon if you want delicacy—Saigon dominates.
