Cinnamomum verum (syn. C. zeylanicum) is true cinnamon—the Sri Lankan tree whose thin, multi-layered quills dry into fragile tan scrolls with sweet, floral, citrus-woody perfume and relatively low coumarin. Bark is delicate compared with thick cassia; flavour is nuanced rather than red-hot spicy. This species is what historical “Ceylon cinnamon” means in botany. Prefer verum quills for custards, chocolate, and dishes where harsh cassia would bully. Grind fresh; powder stales. Look for pale layered quills that crumble, not single hard dark tubes.
