Urfa biber (isot) is a Turkish chilli from Şanlıurfa, sun-dried then “sweated,” yielding dark purplish flakes with smoky, coffee-chocolate, and sweet heat notes—often salted. Finish kebabs, eggs, and vegetable dishes; bloom lightly in warm oil. Less about raw heat, more about shadow and depth. Store airtight to keep the characteristic oiliness.
