Serrano chillies are slim, crisp Mexican pods hotter than jalapeños, ideal raw in pico de gallo and blended salsas. Flavour is clean and sharp with thin walls that do not need peeling. Use raw or quickly fried; less often pickled than jalapeños. Green is standard; red ripe is fruitier. A salsa workhorse.
