Poblano is a large, dark green, mild-to-medium Mexican chilli for chiles rellenos, rajas, and moles when fresh. Wide shoulders and thick walls stuff beautifully; flavour is earthy and rich more than searing. Roast and peel before stuffing or stripping into cream sauces. Dried ripe poblanos become anchos. Heat spikes occasionally—taste before committing a whole pan.
