Guajillo is a smooth-skinned dried Mexican chilli with tangy, green-tea and berry notes and moderate heat—second only to ancho in many salsa and adobo formulas. Stem, seed, toast, soak, purée. Excellent in enchilada sauces and marinades for pork. Bright acidity balances richer anchos and pasillas.
