Gochugaru is Korean chilli flake—sun-dried, deseeded, and ground to fluffy flakes for kimchi, gochujang, and stews. Heat is moderate; flavour is sweet, slightly smoky, and fruity rather than harsh. Use coarse flake for kimchi, finer for sauces. Not interchangeable with generic cayenne flake. Seek Korean packaging for correct cultivar processing.
