Chipotle is a smoke-dried ripe jalapeño—morita (softer, fruitier) or meco (drier, cigar-like). Flavour is smoke, sweet heat, and tobacco-fruit depth defining countless salsas and marinades. Use whole rehydrated, powdered, or canned in adobo. A little dominates beans, barbecue sauces, and mayonnaise. Not a fresh green jalapeño substitute without smoke character.
