Cascabel is a small round dried Mexican chilli whose seeds rattle inside—hence the name. Flavour is nutty, woody, and moderately hot, excellent in pureed salsas and table sauces. Toast until fragrant, soak, and blend. Less common than guajillo but worth seeking for round, toasty depth without overwhelming fruit.
