Aleppo pepper (halaby) is a brick-red Syrian/Turkish chilli flake traditionally oil-cured and lightly salted—moderate heat with raisin-like fruitiness, a finishing spice more than a searing powder. Sprinkle on eggs, manakish, grilled meats, and hummus. Substitute mild flake plus a pinch of salt if true Aleppo is scarce. Avoid confusing with generic crushed red pepper.
