Polish is a crested European breed with a large bony skull protuberance supporting a full topknot of feathers, a V-shaped comb in many varieties, and a refined, upright carriage. Despite the name, the breed’s show form was refined largely in the Netherlands and France; colour varieties include White Crested Black, Golden, Silver, and Buff Laced among others. Historically dual-purpose for eggs and light table meat, modern Polish are kept chiefly as ornamental layers. When used for meat they produce a small to medium carcass of mild, lean flesh suited to roasting whole for small households, poaching, or jointing rather than heavy commercial broiler cuts.
