Birds are selected for egg mass, shell quality, livability, and efficiency under modern production systems rather than for broiler conformation. Meat from Hy-Line stock is incidental: spent layers and unneeded cockerels yield lean, mild poultry for processing, soup, and low-cost food service. Retail fresh chicken is almost always from dedicated broiler genetics; Hy-Line carcasses cook firm and benefit from moist methods or mechanical separation.
