Friesian (Frieshoen) is a light Dutch landrace chicken known for fine pencilling or chamois colour patterns, alert carriage, and strong foraging ability. Historically a smallholder dual-purpose bird, it lays white eggs and dresses out to a lean, small-to-medium carcass suited to whole-bird cookery rather than bulk breast production. Meat quality reflects an active outdoor life: delicate white meat with a clean flavour and dark meat that benefits from roasting, pot-roasting, or traditional Dutch and Frisian stews. Careful cooking avoids drying the lean breast of purebred birds.
