Bielefelder (Bielefelder Kennhuhn) is a modern German autosexing dual-purpose breed created for substantial brown-egg production and a large, meaty carcass. Cockerels and pullets can be sexed by chick down colour. Birds grow heavier than light layers, offering practical farmstead roasting fowl with good breast and leg meat. Culinary performance is strong for a dual-purpose type: whole roast birds, jointed grills, and braises all work well. Meat is milder and more abundant than many rare landraces, while still firmer and more flavourful than ultra-fast industrial broilers when raised more slowly.
