Ameraucana is a North American blue-egg breed developed from Araucana-type genetics with a full tail, muffs and beard, and a pea comb. Medium dual-purpose birds, they lay blue to blue-green eggs and produce a practical farmstead carcass—leaner than industrial broilers but fuller than the lightest layers. Meat is mild and fine-grained, suitable for roasting whole, jointing for grill or pan, and stewing mature hens. Free-range Ameraucanas develop more flavour in the dark meat, while breast portions remain relatively lean and benefit from brining or careful roasting.
