Bays is a California cherimoya cultivar with conical to heart-shaped fruit, relatively smooth skin, and rich sweet flesh favoured by US specialty growers. Seeds are present but flesh quality made it a long-time coastal orchard standard. Flavour leans banana-custard with low fibre when ripe. Pick mature-firm and ripen indoors; tree-ripe soft fruit does not ship. Hand pollination improves marketable yields. Eat with a spoon; strain pulp for ice cream if seeds annoy. Compare with White and Pierce for local microclimate fit.
