Yak Hard Cheese
Yak hard cheese is pressed, aged, or sun-dried cheese from yak milk across the Tibetan Plateau and neighbouring highlands. Low moisture concentrates a slightly sweet, robust mountain-dairy flavour in durable blocks. Grate into soups, shave for boards, or rehydrate scraps in broth. Store cool and dry; supply outside highland Asia is limited.
