Chhurpi
Chhurpi is a Himalayan hard cheese traditionally from yak or chauri milk, dried until rock-hard for long keeping. Soft chhurpi also exists as fresher curd; hard chhurpi is chewed as trail food or soaked for soups. Simmer hard pieces to soften for stews, or nibble small chips. Soft chhurpi fries or crumbles. Flavour is intense and robust—start with small amounts.
