Soft Ripened

Soft-ripened cheeses mature from the outside in under surface moulds or washed cultures, developing creamy to runny paste under a thin rind—Brie and Camembert are archetypes. Serve at cool room temperature when the paste yields to pressure. Bake whole small wheels; avoid boiling. Rind is usually edible.
