Natural Rind
Natural-rind cheeses form a dry coat from air drying and handling without thick bloomy white mould or heavy washing—common on many tommes and farmhouse wheels. Brush or trim rind as taste prefers. Natural rinds protect the paste during long ageing. Store cool and not too wet.
