Zamorano
Zamorano is a hard sheep’s-milk cheese from the province of Zamora in Castile and León, made from Churra and Castellana ewes. Cylindrical wheels show patterned faces similar to Manchego’s traditional mould marks, but the flavour profile is often sharper and more rustic—nutty, slightly tangy, with a buttery sheep richness that deepens into caramel and hay as the cheese matures. Pair with Castilian reds, cured ham, or membrillo; cube for salads or grate aged Zamorano over roasted squash and bean dishes. PDO status distinguishes true provincial production from generic hard sheep cheese. Allow wedges to warm slightly so the paste’s oily mouthfeel and toasted notes open without tasting waxy.
