Rocchetta
Rocchetta is a soft, square-ish Piedmontese cheese of mixed milks with a thin bloomy rind and creamy paste, related in spirit to La Tur but often slightly firmer and milder depending on age. Board with fruit and light white wine, or spread on crostini. Bring toward room temperature before serving for full aroma.
