Feta Mixed
Feta mixed is brined white cheese made from blends of sheep and goat milk (and sometimes cow) in the style of Greek feta—crumbly, tangy, and salty. Blends soften pure-sheep intensity while keeping Mediterranean brine character. Crumble into salads, bake with tomatoes, or whip into spreads. Rinse briefly if too salty. Keep submerged in brine in the fridge.

History
GR
Greek island and mainland makers blended available sheep and goat milk for brined white cheese.
GR
PDO feta rules prioritised sheep (with limited goat) milk, while mixed styles continued elsewhere.
Mixed-milk feta-style cheeses filled non-PDO export markets.
